In December we already said goodbye to the year with a series of seasonal vegetables that will make our Christmas dishes full of flavor and also of color. 🍡
Winter vegetables consolidate and prepare the ground for us to enter a slower and more nutritious kitchen that provides us with internal heat. At the same time, the cold invites you to spend more hours at home and dedicate the time you deserve to the stove. 🍵
Little by little the green and white colors will predominate in your shopping basket with the consolidation of cauliflowers, broccoli, turnips, parsnips, fennels, leeks and winter leafy vegetables, which are increasingly bright. ☀
The vegetables of the month of December are:
🍴Spinach
Spinach has a benefit of providing energy and fighting anemia. This is one of the best known benefits of spinach, since it contains a much higher percentage of iron than we can find in meat, in addition to containing vitamin C, which helps it to be better absorbed, which translates into greater energy level, reducing the risk of anemia.
🍴 Endive
Endive provides antioxidants that regulate blood circulation, prevent cardiovascular diseases, as well as keep the immune system healthy.
🍴 Cabbage
Cabbage is 92% water, high in fiber, and low in calories and carbohydrates. It is rich in vitamins A, C, E and B and in minerals such as sulfur (which provides powerful antioxidant properties), potassium, calcium … it also contains folic acid and arginine, which helps us fight colds.
It is considered a natural antibiotic since it contains substances capable of reducing infectious germs.
🍴 Turnip
Its low caloric value means that turnips can be included in weight control diets. In addition, due to the presence of fiber, they provide a feeling of satiety after consumption and improve intestinal transit.
🍴 Cauliflower
Cauliflower is an important source of fiber and contains vitamin C and several of the B group (thiamine, riboflavin and B6). In addition, cauliflower is a food rich in potassium and phosphorus, helping the body to recover after significant physical effort.
🍴 Leek
The essential oil of the leek is partly expelled by the lungs, which has a beneficial microbicidal effect on colds or bronchitis.
It also prevents the formation of varicose veins and other venous disorders due to its beneficial action on the blood vessels (preserves their flexibility) and its fibrinolytic properties (it thins the blood, which prevents the formation of thrombi).
Nature offers us a variety of foods that, if we take advantage of them well, allow us not only to eat healthily, if it is the optimal moment they will be tastier, with greater nutritional benefits. And, in addition, they will be cheaper, since there may be an excess in some cases. 🙋♀️
