Le pain est l’un des produits clés de notre table , qu’il s’agisse de pain grillé ou de pain de mie. En fait, nous nous tournons souvent vers ce dernier pour le confort et la rapidité, car il dure plus longtemps et nous n’avons pas à l’acheter tous les jours. Cependant, il y a des raisons à prendre en compte pour éviter souvent le pain de mie : 👀
❌Il porte des graisses.
Afin d’augmenter sa spongieuse, mais aussi sa conservation, qui est bien supérieure au pain grillé, on ajoute au pain de mie des graisses végétales, normalement de l’huile d’olive, mais aussi la fraction stéarique de l’huile de tournesol haute oléique. Ces graisses, bien que majoritairement insaturées, augmentent leur pouvoir calorique.
❌ Contient du sucre ajouté.
Afin d’augmenter le volume, on ajoute des sucres libres qui potentialisent les gaz de fermentation. Ces sucres peuvent être complètement fermentés ou laisser une portion résiduelle qui adoucit le pain, mais augmente également sa charge glycémique. Bien sûr, ils apportent plus de calories et le rendent moins sain que le pain normal. D’autre part, la quantité de sucre dans le pain de mie varie beaucoup, mais peut atteindre dans certains cas 8 grammes pour 100 grammes, ce qui reviendrait à environ deux tranches. Cela signifie que si nous mangeons deux sandwichs préparés avec du pain de mie, nous ajouterons environ 14 à 16 grammes de sucre supplémentaire.
❌ Il y a plus de sel.
un autre problème du pain de mie, bien qu’il y ait moins de sel, est qu’ils ont généralement une plus grande proportion de sodium afin d’améliorer leur conservation contre les micro-organismes. La moyenne se situerait aux alentours de 1,5 gramme pour 100 grammes, de sorte qu’avec deux sandwiches nous ingérons 3 grammes de sel, soit plus de la moitié de la quantité de sel journalière recommandée par l’OMS.
